Made with 100% Chardonnay crafted exclusively from Grands Crus

The very clear, golden-yellow color reveals a slow, regular effervescence. The bubbles are extremely fine, feeding a thin cordon on the surface.

The first nose is discreet and delicate, with notes of Menton lemon, honeysuckle, lily of the valley and milk bread. On aeration, the bouquet is enhanced by hints of thyme and lemon balm. The nose is particularly elegant, with freshness and finesse, followed by deeper notes of honey and lemon tart.

The attack is sweet and acidic, then the wine is fluid, slender, light and airy. The structure is perfumed with vanilla and meringue notes. The fine effervescence underlines the creamy sensation of this beautiful material. The freshness of the lemon sorbet and a delicately saline texture are prominent.

The finish is a perfect continuation of the palate, fabulously lemony, slightly salty and long, leaving the memory of magnificent acidity.

Serve this champagne at 10 to 12°C .

If you wish to fully appreciate the unprecedented balance of this cuvée, we recommend that you enjoy it neat. However, it could be served with gougères scallop carpaccio or langoustine tails (olive oil, lemon, salt), langoustine risotto, spaghetti with clams and lemon, or Selle-sur-Cher cheese.
