Cuvée 565 invites you on a journey through time. Bottled in 2012, Cuvée 565 has been left to age on lees for six years to enable the aromas of the five vintages it contains to develop harmoniously, while awakening all five of your senses.
A clear yellow colour with hints of green that reflects its freshness. Tiny bubbles erupt beautifully on its surface. Graceful and refined visual impact.
The initial nose is immediately appealing, opening into an expanse of aromas that reassert its maturity: stewed fruit, hazelnut, acacia honey, praline, toast and candied citrus fruits. This wonderfully complex, autumnal nose gradually gives way to a selection of luscious tertiary aromas.
The attack on the palate is creamy, with the cuvée softly coating the mouth. Its dense, rich vinous character then rises to the fore. This consistency is underpinned by delightful tannins and a bright, vigorous nature. Thanks to the effusive aspects of its effervescence, its texture is particularly dense, almost unctuous. This physical sensation is reminiscent of umami.
The finish is powerful and highly persistent, vigorous and salty yet clean and clear on the palate. This impression of purity captures the imagination and inspires the next mouthful.

Service and suggestion
At 8°C the aromatic expression will be subtle. Paired with food, rich, dense and refined textures are best. Cuvée 565 works beautifully with a 24-month matured Parmesan, and complements John Dory fish, free-range veal or Bresse chicken and mushrooms.
